Our traditional meads begin with Clover Blossom Honey, prized by mead makers for its delicate flavor and light golden color, while our melomels start with a Wildflower Honey. We then mix in heated water to pasteurize the honey and eliminate any unwanted bacteria or wild yeast.

We pasteurize our honey rather than using sulfites because there are people who are sensitive or allergic to them and can have varying reactions. Once everything cools down we pitch our house yeast to begin fermentation.

Six months later (often as many as 12 months) we bottle and keg our finished products by hand, on location.
